I was diagnosed with celiac disease two years ago and felt overwhelmed by how to cook for myself and my non-celiac family. This cookbook gave me recipes everyone actually enjoys. The holiday sections especially helped because I was dreading Thanksgiving.
My daughter has severe gluten sensitivity. , and I was running out of ideas for school lunches and dinners she would eat. The breakfast and snack sections gave me options that do not require major prep in the morning. The cross-contamination tips were information I did not know I needed until I read them.
As someone newly gluten-free, I appreciated that Karen explains explains why certain substitutions work instead of just listing ingredients. Understanding the science helped me adapt recipes I already loved. The fitness meal section fits my training schedule perfectly, and the desserts are good enough that my kids request them over regular baked goods.
My grandmother had celiac, and I watched her struggle with limited options for decades. This cookbook would have changed her life. The variety here is incredible compared to what was available even ten years ago. Karen has done real service for the gluten-free community by making these recipes accessible and tested.
